ベータカロチンの紹介

ベータカロチンはニンジンにオレンジ色を与える分子であり、多くの果物や野菜、卵黄などの動物性食品に含まれるカロテノイドと呼ばれる化学物質のファミリーの一部です。生物学的には、ベータカロチンはビタミンAの前駆体として最も重要です。また、抗酸化作用があり、癌や他の病気の予防に役立つ可能性があります。ベータカロチンは、ベータカロチン15、150-ジオキシゲナーゼによる酸化的切断後に体内でビタミンAに変換されるため、プロビタミンとしても知られています。植物では、ベータカロチンは抗酸化剤として作用し、光合成中に形成された一重項酸素ラジカルを中和します
